Antioxidant Enriched Soup

This winter warmer really is the best soup. With a mix of broccoli, tomatoes, carrots, garlic, ginger, spices and herbs, each spoonful does wonders for your body! Packed with a powerhouse of ingredients to boost your immunity, it’s loaded with nutrients and bursting with flavour. It’s a real knockout, and with one meal you’re well on your way to getting your 5 a day. We love making a whole pot of this to last for a few meals through the week. Why don’t you try it with some sliced avocado, some brown rice or a crusty baguette!

Serves Two:

– ½ head of broccoli
– ½ onion
– 2 cloves of garlic
– a small portion of ginger
– 4 vine tomatoes
– 2 medium sized carrots
– a pinch of curry powder
– a pinch of Italian seasoning
– a pinch of thyme
– ½ cup of water
– olive oil
– chicken stock
– salt and pepper

Chop the vegetables into small pieces.
Place the garlic, ginger and onions in a saucepan with the olive oil, curry powder, salt, pepper and seasoning. Let this sautee until caramelised, at this point add the broccoli.
Let the broccoli cook until tender, then add the carrots and tomatoes. Sautee for another 5 minutes until tender.
Pour chicken stock into pot, bring to a boil and simmer for 10 minutes.
Transfer pot contents to a blender and puree on high until smooth. Then serve.
